Steamed orange sponge pud

This pudding is so delicious, easy and quick to make that you’ll never be caught short for a gluten or dairy free dessert ever again.

Steamed orange sponge pud

Ingredients

 

For the sponge
125g Isabel’s sponge cake or batter mix
125g sugar
75g butter or dairy free spread
2 eggs
Zest of 1 orange
2Tbsps milk or milk substitute

 

For the sauce
Grated zest of 1 orange
Juice of 2 oranges
3 Tbsp of sugar
1/2 tsp Isabel’s Baking Fix

Method

Grease an 850ml pudding basin (1 ½ pint).

For the sauce –in heavy base saucepan mix the ‘Baking Fix’ with the sugar and add the orange juice in small amounts until it dissolves. Warm the mixture gently to make a runny sauce and set aside.

Cream the butter and sugar together until fluffy.  Add the eggs in one by one and mix well. Then add the flour to the mixture and beat well. Stir in the zest and the milk to make a soft dropping consistency.

Pour the sauce at the bottom of the basin, then add the sponge mixture on the top and cover securely with cling film. Place the basin into the microwave for 2 minutes on high (900w). Let it rest for a few seconds, then microwave for a further 2 minutes until well-risen and firm.

Take the pudding out of the microwave and let it rest for 2 minutes. Turn the pudding out onto a large warm serving plate. Serve with custard or pouring cream.
