Gluten free baguette

Seeded Baguette


Oven Temp: 210OC Fan

Baking Time: 35 Minutes

1 x Baguette Tray

Dry Ingredients                                                                                Wet Ingredients

60g of Isabel’s Wholemeal Cassava Flour                                    2 Tbsp. Vegetable oil

40g Brown Rice Flour                                                                       1 Tsp Cider Vinegar

20g Potato Starch                                                                               1 Egg White (reserve the yolk)

¼ Tsp Salt                                                                                           90g Water

1 Tsp Baking Powder                                                                         1 ½ Tsp Psyllium Husk

5g Fast Action Yeast                                                                          1 Tsp Milled Linseed

1 Tsp Caster Sugar (Optional)                                                          1 Tsp Milled Sunflower Seeds

½ Tsp Isabel’s Baking Fix                                                                 Additional Seeds to sprinkle.


  1. In a bowl, mix together all the wet ingredients, set aside.
  2. In a bowl sieve together all the dry ingredients until well combined.
  3. Add the wet ingredients to the flour mix, then using an electric hand whisk, whisk together for around 1 minute.
  4. Take a piece of parchment the same length and a little wider than the French stick tray. Lightly oil the parchment and place the dough onto the parchment. With wet hands form the dough into a long baguette shape, smoothing as you go along. Spreading the dough to around 2 cm from each end.
  5. Place the baguette with the parchment onto the baguette tray, cover with some oiled cling film, leave to prove for around 1 hour. Brush with the reserved Egg Yolk and sprinkle with some Seeds should you wish. Preheating the oven toward the end of the proving.
  6. Place the baguette tray into the preheated oven and bake for 35 minutes.
  7. Remove from the oven and leave until fully cold before cutting.
