Quick Vegan Mayonnaise

This vegan mayonnaise recipe really couldn’t be simpler. You will not need to use tofu to get that nice consistence, but you could still add the tofu or cashew nuts for the nutrition aspect…

Quick Vegan Mayonnaise

Ingredients

1 Tbsp of Gluten Free Baking Fix
1 Tbsp of rapeseed oil
2 Tbsp of sunflower oil
1 Tbsp of lemon juice
1 tsp of Dijon mustard
50g almond milk or water
¼ tsp of garlic powder (optional, but nice)
Salt and freshly ground to taste

Method

1. If you have a blender the whole process is even easier, but don’t worry if not as you’ll be able to mix it by hand using a balloon whisk.

2. Place the Baking Fix in a large size bowl. Combine the almond milk and lemon juice and slowly add to the Baking Fix mixing continuously to avoid creating any lumps. While mixing, slowly add in the oil until the mixture emulsifies and thickens.

3. Add the mustard, garlic powder, salt and pepper and mix well together. If the mayonnaise is too thick add a little more almond milk or if too thin add a bit more oil.

Taste for seasoning and adjust if necessary. Use as required.
