Rosemary Potatoes

These lovely roasties are crispy, fluffy and delicious served with your roast or just as a snack.

Rosemary Potatoes

Ingredients

500g Maris pipers potatoes chopped into cubes (or any floury potatoes will do).

2 tsp Isabel’s pizza base mix

Spring of fresh rosemary

Salt and freshly ground black pepper to taste

A generous drizzle of olive oil

Method

1. Preheat the oven 200C fan assisted.

2. Chopped the potatoes into cubes, then boil them for about 10 minutes. Drain the potatoes and place them into a non-stick large baking try.

3. Season the potatoes with the rosemary, salt and pepper, then sprinkle the flour all over and give a generous drizzle with the olive oil making sure that all the potatoes are covered with the seasoning ingredients.

4. Place the tray in the oven and bake for about 20-25 minutes or until the potatoes are golden and fluffy. Sprinkle fresh herbs on top and serve.

Tip: You could create many varieties of this dish by add fresh herbs, spices or chillies to the potatoes.
