Magic pudding

I first came across this recipe in Pinterest; I saw the image and thought that it looked interesting – it was called ‘Magic cake’, but for me this dessert is more like a pudding rather than a cake…

Gluten free magic cake

It reminds me a bit of vanilla slices, because at a closer look it appears to have 2 or 3 layers, making you think that it could be time consuming and fiddly to prepare. But all hail no, this pudding is delightful and super-easy to make, hurray! I think you could make a lot of people happy with this dessert, even if they are non gluten free.

Preparation time: 15 minutes
Cooking time: 45 minutes

Magic pudding

Makes 12 slices


115g Isabel’s batter or sponge or donut mixes

125g of melted butter

150g sugar

500ml lukewarm milk

Zest of 2 lemons

4 eggs

1 Tbsp water

Icing sugar for dusting the puds after baking


1. Pre-heat the oven at 180C (160C fan assisted). Grease a baking tray size approx. 30 x 23 x 4cm.

2. Separate the eggs, place the egg whites into a clean bowl and aside until required.

3. Beat the egg yolks with the sugar until light and creamy. Add the melted butter and continue beating the mixture for a minute or two. Then add the batter mix flour and stir thoroughly.

4. Whisk the egg whites until it forms peak and set aside.

5. Slowly pour the milk into the egg, sugar, butter and flour mixture and incorporate until well mix together. Then gently fold the egg whites into the mixture using a metal spoon, making sure that all the egg whites are folded in.

6. Pour the mixture into the prepared baking tray and bake for approximately 45 minutes (baking timing will depend on how deep the baking tray used is). The pudding will be ready when the top is a light golden brown.

7. Allow the pudding to cool down before sprinkling with icing sugar and cutting into slices. Decorate with summer fruit if wish. Keep in the fridge.
