Vegan chocolate cake – gluten free

No egg, dairy or gluten and yet it is deliciously light, moist and chocolatey vegan cake I have ever tried. It is hard to believe it doesn’t contain those ingredients symbolic for creating a good cake.

The frosting is equally tasty, created in a moment of inspiration when I got stuck for a vegan frosting – but brilliant idea even if I say so myself. I’m sure you’ll adapt it with a variety of flavours depending on the diet you are trying to cater for.

 

 

Vegan chocolate cake – gluten free

12 slices

Ingredients

175g batter mix flour
125g granulated Sugar
45gs cocoa Powder (70% or 100% solids)
1 tsp (5g) bi-carb of soda
56gs apple sauce
185g water
3 Tbsp vegetable oil (I used rapeseed oil)
1 tsp lemon Juice
1 tsp good vanilla extract
2 medium apples peeled, cored and diced finely (about 135g)

For the vegan frosting:
3 Tbsp of cocoa powder
4 Tbsp of icing sugar
1 Tbsp of Gluten Free Baking Fix
1 Tbsp of rapeseed oil
1 vanilla essence
1 Tbsp of lemon juice
1/2 tsp of treacle (adds a rick, dark flavour)
65g water

Method

Preheat oven to 180ºC/350F/ (160ºC fan assisted) for 10 minutes. Lightly grease with oil and line with grease proof paper a medium size cake tin approx. 29cm×19cm.

Place in a large bowl the flour, sugar, cocoa powder and bi-carb of soda. Then mix all the ingredients together and make a well in the middle. In another bowl add the apple sauce, water, oil, lemon juice and vanilla extract and mix well.

Pour the wet ingredients over the dry mixture and stir with a balloon whisk or wooden spoon until it forms a soft cake dough.

Fold the diced apples into the mix and pour it in the prepared baking tin. Bake for 30-35 minutes or until when inserting a skewer in the center of the cake it comes out clean.

For the vegan frosting:

In a medium size bowl add the icing sugar, cocoa powder, Baking Fix and gently mix well using a balloon whisk. Then add in the oil, vanilla essence and water and mix well until it forms a nice consistency frosting. Add the lemon juice and mix again.

Sample the frosting and adjust to your own taste, adding a little more cocoa powder or sugar if necessary. Apply frosting to your cake.
