Gluten & Grain Free Christmas Biscuits

This lovely biscuit recipe was supplied to us by our lovely customer Adele Dobson. Adele made the biscuits and said that they turned out beautifully and had a great ‘snap’. A lot of gluten free flours can taste quite gritty, but not this one.

Gluten & Grain Free Christmas Biscuits

24 units approx.

Ingredients

210g Isabel’s wholemeal all-purpose Cassava flour
150g Caster sugar
150g butter
1 free range large egg
1tsp vanilla
½ tsp bicarb
¼ tsp salt

Method

Preparation: 30 minutes
Baking time: 12-15 minutes

Preheat oven to 180°C/ fan-assisted oven 160°C/ Gas mark 4/ 350 ºF.In a large bowl, beat the butter on high with a hand mixer until creamy.
Add the sugar, bicarbonate of soda, and salt, and beat once more until combined, scraping the sides to mix well.
Beat in the egg and vanilla.
Add the flour and mix with a spatula until combined and gently roll the dough into a ball.
Place a large piece of parchment paper on the surface and place dough onto it.
Flatten the dough out and place another piece of parchment paper on top, then carefully roll it out to 1/4″ thickness with a rolling pin. Careful not to press too hard or the parchment paper will stick. Remove top piece of parchment.
Use biscuit cutters to cut out the desired shapes, then carefully transfer them to a parchment lined baking sheet with a spatula.

Space out the biscuits 2cm apart and bake on the middle shelf for 12-15 minutes or until edges become lightly golden.
Repeat biscuits cutting process with remaining dough and bake.
Allow the biscuits to cool down before decorating.
