Tea cakes

These tea cakes are lovely and easy to prepare.

Gluten free tea cakes

Tea cakes

Ingredients

200g Isabel’s pizza base mix

50g dried blueberries or raisings

2 eggs

2 tsp baking powder

1 tsp sugar

1 tsp mixed spices

2 Tbsp veg. oil

50ml Water

Method

1. Pre-heat at oven 180C

2. Mix all the ingredients together to make the dough. Knead the dough for a few minutes. Take pieces of the dough and roll into a ball shape, then flatten the balls into circles about 70mm wide and 10-15mm deep.

3. Drop the dough into boiling water and cook them for about a minute or until the dough puffs up about 2-3 times its original size.

4. Remove from the water with a slotted spoon, dry as much of the water as possible and place the tea cakes on a well greased baking tray.

5. Bake for about 20-25 minutes or until golden brown with a firm crust. Remove from the oven and let it cool down. Slice with a serrated knife and serve.

Tips. These tea cakes are  great for making Italian-style crispy bread, eaten as a snack on its own or with tea. If you have some leftovers next day slice the tea cakes and bake them until crispy 15-20 minutes. Keep in air tight container.
