Dairy free Eve’s pudding

One of our favourite puddings made with apples at the bottom and a light buttery sponge on the top.

This pudding is very easy and quick to prepare and you’ll everyone asking for more. It can easily be made dairy free by substituting the butter for a dairy free spread.

Dairy free Eve’s pudding

Serves 6

Ingredients

150g batter mix or 125g sponge cake or 115g donut mixes
25g grounded almond
1 tsp baking powder
100g caster sugar
100g vegetable spread or butter
60g KOKO milk or Almond milk
Vanilla essence
2 eggs
3 apples, peeled, cored and sliced
2 tsp lemon juice
25g flaked almonds

Method

1. Preheat oven to 180ºC/350F/ (160ºC fan assisted) for 10 minutes. Grease a 9” round ovenproof dish with butter.

2. Mix the apples with 2 tsp of sugar and lemon juice. Arrange the fruit onto the greased dish.

3. Place the batter mix flour, ground almond and baking powder in a bowl mix well and set aside.

4. In a large bowl cream the butter, sugar and vanilla together until light and fluffy. Add the eggs one by one and mix really well.

5. Mix the dry ingredients into the butter, sugar and egg mixture until it forms a smooth batter. Add the KoKo milk and stir to form a soft, dropping consistency sponge mix.

6. Spread the sponge mixture over the fruit and sprinkle the almond flakes over.

7. Bake in the preheated oven for 35-40 minutes until the sponge is golden brown.

8. Serve the pudding hot with custard or single cream.
