Banana & cinnamon sugar parcels

Ingredients

250g Isabel’s pizza mix
plus extra for dusting
1 whole egg, 4 egg yolks
2 Tbsp olive oil
1 1/2 Tbsp of Rum
100g water approx.
Vegetable for deep frying

Filling: 1 ripe banana  

For coating: 60g Caster sugar
1/2 tsp cinnamon

Filling

I have filled my parcels with ripe bananas and dusted them with cinnamon sugar, but this dough can also be used to make savoury pasties, filled with all sort of delicious things. Just mind that any fillings you may add, does not contain too much moisture.

Method

1. Place the flour into a large bowl and make a well in the middle. Add the whole egg, egg yolks, oil and the rum into the well. Using your fingers mix all the ingredients together, gradually adding the water until it forms a dough. Add a little more water if necessary.

2. When the dough is complete, knead for a further 5-10 minutes until becomes very pliable. Dust the dough with extra flour to help prevent the dough sticking to the machine or the rolling pin.

3. Divide the dough, then take one piece and roll through the pasta machine (if using one), starting on the widest setting and use setting 4 to get your dough very thin. If don’t have a pasta machine use the rolling pin instead. The sheet of dough should be about 1.5 mm thick approx.

4. Cut the dough into the desired shape, round, half-moon or square. Place banana pieces inside of the prepared dough, then place the other piece of dough on top to cover and press the sides firmly to form a parcel.

Heat the vegetable oil in a deep frying pan on a medium to high heat and fry the parcels until golden brown, careful not to burn them. Remove from the oil and place into the sugar and cinnamon mixture straight away.  Serve warm.
