Apple pie crust

Ingredients

What so special about this gluten free pie base? For starts this base is not fatty or greasy and it has a delicious soft and crunchy texture, which my non-coeliac family enjoyed a lot.

125g Isabel’s dough balls mix
50g ground almond
50g butter
50g sugar
1 tsp baking powder
1 tsp cinnamon
1 large size free range egg
30ml coconut cream

Filling:

4 medium size apples Cox, Braeburn or cooking apples cored and sliced
Juice of medium size lemon
2 Tbsp brown sugar

 

Method

1. Pre-heat the oven at 180ᴼC. and grease generously a round pie dish.

2. Core, peel and slice the apple, pour the lemon juice over it and set aside until required.

3. Place all the dry ingredients in a mixing bowl apart from brown sugar and mix well. Add the butter to the dry ingredients mixture and rub in using your fingers until it resembles a crumble mix. Then make a well in the middle, add the egg. Beat all the ingredients together until it forms a soft, but firm enough to handle dough.

4. Spoon the dough into the pie dish spreading it over the base and sides to create a nice and even as possible base. You can spread the dough with the help of a wet spoon; spatula or your hands greased a little to help moulding the dough around the dish. Then arrange the apple slices on top of the dough and sprinkle the brown sugar on top of the apples.

5. Place the dish into the preheat oven and bake for about 25 -30 minutes or until golden brown. Sprinkle a little icing sugar on top and serve warm or cold with cream, custard or ice-cream.
