Lime, Ginger & Coconut Cookies

12-16 cookies

Ingredients

90g Isabel’s No.1 Cassava Flour

30g Desiccated Coconut

50g Caster Sugar

40g Light Brown Soft Sugar

60g Butter or Block Stork

1 Medium Egg

1 Tsp Ginger

Pinch Salt

¼ Tsp Baking Powder

1 Tsp Isabel’s Baking Fix

Zest of 1 Lime

2 Balls of Stem Ginger Grated

 

 

Method

Oven Temp: 170OC Fan

Baking Time: 12-15 Minutes

1 x Baking tray, lined with parchment

1.       Preheat your oven to 170OC Fan, line 2 trays with baking parchment.

 2.       In a bowl melt the Butter or Stork, add in the Sugars and the Egg, beat well.

 3.       Sieve together the Flour, Salt, Baking powder and Baking Fix, place on top of the Butter mixture, add in the Lime Zest, grated Stem Ginger, Ginger Powder and the Coconut. Stir well together until all combined.

 4.       Place level tablespoons of the mix onto the prepared trays, shape into smooth domes if you want uniform cookies. Leave a space of at least 4cm between each blob.

 5.       Bake immediately in the preheated oven for 12-15 minutes.

 6.       Remove from the oven, leave the cookies on the trays to firm up for a few minutes.  Transfer to a cooling rack, once cool store in an air tight tin for 3-4 days (should they last that long).
