Crepes make an ideal vehicle to convey delicious fillings as they are soft, easy to roll and also very tasty. Fill them with various foods such a fried chicken strip, cold sliced meat, fish or vegetables – accompanied by shredded lettuce, diced tomato or guacamole, sauteed mushrooms, bacon, grilled onions, cheese and dressing.

  1. Makes light fluffy pancakes, you would not know the difference. Great filled with beetroot and creme fraiche for savory, and golden syrup for sweet. We struggle to find in shops though, so has to be on a direct delivery from Isabel.

  2. 5 star pancakes – so delicious and easy to make. I think they are actually nicer than wheat flour pancakes – they taste delicious and the texture is absolutely perfect. Also, because the batter is quite thin, it’s easy to make delicate crepes, even if you’re not great at making pancakes!

You'll Need

1 Sachet of Isabel’s pancake mix 2 large eggs 1 Tbsp of Vegetable oil or melted butter 320ml of milk or substitute


Place the flour mix onto a large bowl and make a well in the middle. Add the eggs, oil or butter and a little of the milk, whisk vigorously with a balloon whisk to make a lump free batter. Then slowly add in the rest of the milk mixing well to form a thin batter. Lightly grease a heavy-based frying pan or a non-stick crepe pan. Pour in a ladleful of batter and tilt the pan to cover the base with a thin layer. Cook over a medium heat for 1 minute or until the bottom of the crepe becomes golden brown. Turn over with a palette knife or a spatula and cook the other side for a further 1 minute.  Place the pancake in a cooling rack and repeat the process with the remaining batter, greasing the pan again if necessary. Serve wrapped around your favourite sweet or savoury filling.
