  1. I am gluten, dairy and nut free. Most puds are very bland but the easy pud chocolate was fantadtically moist and scrumsiously delicious.
    I added dairy free orange chocolate chips (took small bar in its packet, bashed with rolling – made own chips) – delicious.
    Have also made it with mint flavoured carob and the background hint of mint just lifts it to posh level – I also added a very small young mint leaf on the top.

  2. Delicious, very easy. I made these in my cake pop maker. Once cooled I piled them carefully on top of each other and dusted with icing sugar… my guests were impressed!!!

  3. Couldn’t be better, I add some chopped up dark chocolate and fold in. I use 3 ramekins, we share one and reheat the others from the fridge in the microwave… day 2 then 3. They are just as good. Lovely. You can also have a layer of cooked fruit like pears with a sponge top. Just be careful the fruit doesn’t spit / hot liquids.

You'll Need

  • 115g of Isabel’s Easy Pud Chocolate Mix
  • 115g of sugar or substitute
  • 115g of soft butter or dairy free spread
  • 1 large free range egg
  • 5 Tbsp of milk or substitute
  • 30g of dark chocolate chips or 6 chocolate bar squares, if you’re feeling naughty

Preparation

Method: 1. butter 6 ramekins thoroughly. Cream the butter and sugar together. Gradually beat in the egg. 2. Fold in the chocolate flour mix. Add the mix or substitute to make a soft dropping consistency. (Stir through chocolate chips if using). 3. Fill each ramekin by a third with the sponge mixture. (Add a chocolate square to each if using). Microwave 2 at a time for 1 minute on high (750w). 4. Serve with ice-cream or soft fruit.

Hints & Tips

This pud is perfect for adding your own creativity.  Why not add toffee-filled chocolate to the sponge pudding batter to create a delicious lava pudding, a lovely treat when serve with ice-cream. Also mix in some dried fruit, mixed peel, nuts or/and liqueurs to the batter to create a beautiful rich pudding. Storage Cover with cling film and place in the fridge. Eat within 3 days. To re-heat, drizzle a couple of tsp of water over the cake and place in the microwave on high for 20 seconds.
