A xanthan gum this is essential for making gluten free breads, cakes and pastries. We call it a ‘store cupboard saviour’. It works as a binding agent for your baked goods and creates that gluten-like texture. Also works as emulsifier and thickener agent for sauces , gravies and puddings. It’s a more sustainable ingredient, vegetable based, and has excellent water absorption and freeze-thaw properties. It brings out the natural flavour of whatever you’re baking or cooking.

Over the the past 6 years I have made my coeliac daughter birthday cakes and they have always had a tonne of ingredients and still sunk in the middle but this year thanks to you her birthday cake was out of this world and she is a very happy 15 year old and I am a very happy baker.   7. I recently tried this as an alternative to xanthan gum to make gluten free rough puff pastry and it worked treat. Used the instructions on the back to see how much to use, and I had lovely flaky pastry without the dough feeling overworked like with xanthan gum. x

How to use

  • For bread, use 1 Tbsp per 500g flour
  • For cakes or pastry, use 1 tsp per 200g flour
