Chicken in Coconut Cream Sauce – Serves 4

You’ll need:
1 jar of Isabel’s Coconut & Cream Cheese sauce
300g chicken breasts (cut into 2-inch pieces)
Chopped fresh coriander (optional).

1.  Heat  1 ½ tablespoons of olive oil in a large saucepan over medium high heat for about 2-3 minutes. Add the chicken and cook for 3 to 4 minutes turning occasionally. 2. Stir in the contents of the jar and reduce heat to medium. Cook for 7 to 10 minutes, or until chicken is no longer pink in center and juices run clear. Garnish with fresh chopped coriander.

Store in a cool dry place. Once opened refrigerate for up to 3 days.
